Can you keep enchiladas warm in a crock pot?

I am wanting to make enchiladas for a potluck at work tomorrow. i want to bake them in the oven, then layer them in a crock pot with some foil or wax paper in between the layers. will this work? any other suggestions to keep them warm during the day? the pot luck isnt til 12 and we dont have an oven at work.
