Is there a way to keep peeled potatoes fresh?

I usually peel the potatoes (rinse & clean) then I and put them in a bowl of water inside the refrigerator. Make sure the water covers the potatoes completely. This will keep them fresh although sometimes my refrigerator is so cold it freezes the water and they're no good.
